Established in 1805, the second year of culture. So it’s been for 213 years.
The first generation was Hachibei Motosaka. At that time, I couldn’t give out my name unless I was a samurai, so I was just Hachibei, but since then I have been following Hachibei for four generations.
All the eldest sons have taken over the house in the name of Hachibei.

However, 5th generation Hachibei was dispatched and died during the war. My second son also died in the war so there is no trace left, my grandparents took over the house as an adopted daughter, my father gave birth to me and me.

Rice is only available in Mie province

When did you start making sake rice?

My father started planting it around 1987. This rice variety called “Ise Nishiki” is a type of wet rice that originated in Mie prefecture and went extinct. However, according to records, it appears to be an early water rice variety in Japan.
While making sake, my father focused on the raw rice, towards the uniqueness, a product that could only be made in-house. I discovered it while searching for a variety only available in Mie province.
Since then, a sake called “Ise Nishiki” was born.

“Hachibei Sake Junmai Daiginjo Sake Ise Nishiki” won a gold medal at the 2006 National New Sake Appraisal. That was when I was about 20 years old. I’m still in Tokyo.
“Ise Nishiki” and Mr. Shinpei are almost the same age.

Right. At that time, I was sharing a room with my friends in Tokyo. I remember crying when “Ise Nishiki”, who won the gold medal, was sent to me.

I and “Ise Nishiki” were raised by the same parents. However, it was “Ise Nishiki” that produced the results. I still remember the regret.
It is a complicated feeling.

The value of Japanese sake

Do you have any problems when Shinpei-san decides to take over?

What I still feel in the field every day is my way of thinking about the value of sake. If you want to sell Japanese sake at a premium price, you have no choice but to increase the polishing ratio of the rice. It is possible to increase prices by using Ginjo Sake or Daiginjo Sake. However, this is due to raw material costs, not value added.
It’s just a story that if you buy expensive eggs and make fried eggs, you will run out of money, unless you sell a premium.

Introducing a machine can improve the quality of sake, but using a machine does not add value.
It is a difficult place.

At that time, I think that only raw rice is needed to increase the added value. However, good raw rice is very expensive. However, even if it’s the cheap raw rice, if it is suitable for brewing sake, it will be an added value if it can be produced as a taste of the sake brewery that only can be found there.
It is a different value from the raw rice we bought.

We want to make this sake, and we use this rice for it. This rice is made by the people of this land. How much can I pay for a result benefit? I think the sake breweries have to do more for the consumer. The current situation in Japan’s sake industry is that this has not been done.

Our water system uses the Miyagawa water system. When you hear “Miyakawa”, you think of “river”, but it is “river” that includes “groundwater”. In fact, there aren’t that many sake breweries in such a mountainous countryside.

There are many rice fields around us. Regarding wine, I think Odaimachi has the appeal of a winery surrounded by Burgundy wine fields.
